Twinings Mango and Lychee Green Tea is a flavoured green, so the job is to look after the green base and let the fruit ride on top of it. Pour water that has come off the boil and settled to about 80C, give it two minutes, and you get rounded mango and lychee over a soft, unscorched leaf. Straight-from-the-kettle water only sharpens the tea and buries the fruit.

You'll need

  • 1 tea bag of Twinings Mango and Lychee Green Tea
  • 200ml freshly boiled water, cooled for about a minute (around 80C)
  • A little honey, to taste (optional)

Method

  1. Boil the kettle, then let it stand for about a minute so the water drops to around 80C.
  2. Pop the bag into your cup and pour the water over.
  3. Steep for 2 minutes, no longer, to keep it smooth and let the fruit come through.
  4. Lift out the bag without squeezing it, add a little honey if you like, and enjoy.
  5. For the most distinct fruit note, use water at exactly 80C; hotter water pushes the green base forward and masks the mango and lychee.
What you'll end up with: Rounded mango and lychee sitting over a gentle green tea, with none of the bitterness that too-hot water brings.
