The fruit only shines if the green underneath has not been scorched, so let the water cool a little below boiling before pouring. Straight off a hard boil and the base turns bitter, which buries the fruit.

You'll need

  • 1 tea bag of Tetley Green Tea with Mango and Passion Fruit
  • 200ml just-off-boil water cooled to about 80C (boil the kettle, then let it stand for roughly 90 seconds)
  • Optional: a little honey if you like it sweeter

Method

  1. Boil the kettle and let it cool to around 80C (check with a thermometer or use a temperature-controlled kettle), since fully boiling water scorches green tea.
  2. Put a bag in your mug and pour over 200ml of the slightly cooled water.
  3. Steep for two to three minutes, no longer, then lift the bag out and let it drip without squeezing.
  4. The fruit gives plenty of sweetness on its own, so drink it as it is, adding honey only if you want it sweeter.
What you'll end up with: A bright, golden cup led by sweet mango with a passion-fruit tang, finishing clean and smooth. About four minutes' work.
