  1. Boil the kettle, then let it stand for about a minute so the water drops to around 80C.
  2. Pop the bag into your cup and pour the water over.
  3. Steep for 2 minutes, no longer, to keep it smooth and let the fruit come through.
  4. Lift out the bag without squeezing it, add a little honey if you like, and enjoy.
  5. For the most distinct fruit note, use water at exactly 80C; hotter water pushes the green base forward and masks the mango and lychee.
