Leave the chemistry to one side: what counts here is a properly enjoyable everyday powder at a sane price. Leaf grown in shade gives it depth: savoury umami first, a clean brightness like spring grass behind it, then a sweet hay note that means you can happily skip the sugar. Whisked correctly it goes silky and dense rather than thin and dusty, which is the line between good matcha and disappointing matcha. It is not ceremonial grade and is not priced like it, so expect a sturdy, slightly more vegetal daily cup instead of the delicate sweetness of a top tier Japanese ceremonial tin. The technique is the make-or-break, not the leaf: water off the boil, around eighty degrees, and actually whisk it (a cheap bamboo chasen or a milk frother) or it clumps and turns bitter. Superb as a frothed oat-milk latte, excellent cold over ice. A reliable daily matcha, not a meditation in a bowl, and all the better for it.

Brewing the perfect cup

Water temperature80°C. Check it with a thermometer, or dial it in on a temperature control kettle, because boiled water cools at its own pace in each kettle and with each quantity. Matcha suffers at a full 100°C: the heat destroys the delicate amino acids behind its smooth, sweet taste.

MeasureAllow one bag per 200ml of water, an average mugful. For loose leaf, use one heaped teaspoon.

Steep2 to 3 minutes; stretch it further and bitterness takes over. Remove the bag promptly; do not squeeze.

ServiceTake it without milk or sugar, since its own sweet, grassy character is plenty. For a brighter cup, add a slice of lemon.

Cold brewIn a glass jug, cover one bag with 250ml of cold water and keep it refrigerated for 4 to 8 hours. Cold water coaxes out the sweeter compounds before anything else, and on a hot day it gives the smoothest green tea there is.

Iced versionBrew it twice as strong for this: one bag, 100ml of water at 80°C, 2 minutes. Cool, then serve on ice, diluted with cold water to taste.
