Yerba Mate Latte
An energising, dairy free latte: strong yerba mate topped with frothed oat milk and a touch of agave, a green alternative to coffee.

If you like the idea of a latte but want a lift without Coffee, yerba mate does the job. It is naturally energising and takes well to oat milk, giving a creamy cup with a green, faintly smoky edge underneath.

Brew the mate strong but not hot enough to turn it bitter, then top with frothed oat milk and a little agave. It makes a good mid morning drink for anyone cutting down on coffee without wanting to lose the boost.
You'll need
- 2 pyramid tea bags of Teapigs Yerba Mate (for concentrate)
- 100ml freshly drawn water cooled to 80C
- 180ml barista oat milk
- 1 teaspoon agave syrup
- 1 280ml mug, warmed
- 1 small saucepan and a saucer for covering
- 1 small balloon whisk or milk frother
Method
- Warm your mug. Boil the kettle and let it cool for a minute to about 80C.
- Steep two pyramid bags in just 100ml of the cooled water for five minutes, covered, for a strong concentrate.
- Lift out the bags, press gently, and stir the agave into the concentrate.
- Heat the oat milk until steaming but not boiling, and froth until smooth.
- Pour the concentrate into the mug and top with the frothed oat milk.
- Tip: keep the water off the boil; mate brewed too hot turns bitter and the milk will not hide it.
