Method

  1. Warm your mug. Boil the kettle and let it cool for a minute to about 80C.
  2. Steep two pyramid bags in just 100ml of the cooled water for five minutes, covered, for a strong concentrate.
  3. Lift out the bags, press gently, and stir the agave into the concentrate.
  4. Heat the oat milk until steaming but not boiling, and froth until smooth.
  5. Pour the concentrate into the mug and top with the frothed oat milk.
  6. Tip: keep the water off the boil; mate brewed too hot turns bitter and the milk will not hide it.
