Yerba mate and dulce de leche both come from Argentina, and they belong together: the toffee sweetness of the ice cream against the green, slightly bitter mate is a proper match. This is the simplest way to get them in the same glass.

Steep the mate strong in a little warm milk, then pour it over scoops of dulce de leche ice cream so the edges melt into a caramel-mate sauce. A grown-up pudding that takes five minutes.

You'll need

  • 1 pyramid tea bag of Teapigs Yerba Mate
  • 80ml hot whole milk (heated to 80C)
  • 2 small scoops of dulce de leche ice cream
  • 1 small 200ml glass, chilled
  • 1 small saucepan
  • 1 small balloon whisk
  • 1 long spoon, for eating

Method

  1. Chill a small glass while you make the mate milk.
  2. Heat the milk in a small pan until steaming but not boiling.
  3. Off the heat, drop in the pyramid bag, cover and steep for five minutes.
  4. Lift out the bag and whisk the milk smooth.
  5. Scoop the dulce de leche ice cream into the chilled glass.
  6. Pour the warm mate milk slowly over so it pools around the ice cream.
  7. Eat straight away with a long spoon, while it is half warm and half cold.
  8. Tip: the slight bitterness of mate stops the dulce de leche being too sweet, so resist adding any sugar.
What you'll end up with: A glass of dulce de leche ice cream melting into warm mate milk, toffee and green-bitter at once.
