A hot mug of moringa Green Tea given the classic honey, lemon and ginger treatment. Ginger goes in with the leaf so its warmth brews right into the cup, honey is stirred through at the end so it stays clean, and the lemon is squeezed in last, off the heat, so the citrus keeps its brightness instead of cooking flat.

You'll need

  • 2 Dalgety Moringa with Green Tea bags
  • 300ml freshly drawn water, brought to a rolling boil, then cooled to about 80C (check with a thermometer)
  • 2 fresh ginger root coins, peeled and gently crushed (about 15g)
  • 1 tablespoon of clear runny honey
  • 30ml fresh lemon juice (about half a lemon)
  • 1 warmed cup of at least 350ml

Method

  1. Warm a mug with hot water, then tip it out.
  2. Boil 300ml of water and let it cool to around 80C (check with a thermometer or use a temperature-controlled kettle).
  3. Put two tea bags and two crushed ginger coins in the mug and pour the water over them.
  4. Cover with a saucer and leave to steep for three minutes.
  5. Lift out the bags without pressing them, then spoon out the ginger.
  6. Stir in the honey while the tea is hot, then squeeze in the lemon once the mug is off the boil.
  7. Add the lemon right at the end rather than during the steep, as hot water dulls the fresh citrus.
What you'll end up with: A clear, pale-green mug with gentle heat from the ginger, a round honey sweetness and a bright lift of lemon over the top. Warming and clean, easy to sip first thing.
