Honey, Lemon and Ginger Green Tea

Method

  1. Warm a mug with hot water, then tip it out.
  2. Boil 300ml of water and let it stand for a couple of minutes to settle to around 80C.
  3. Put two tea bags and two crushed ginger coins in the mug and pour the water over them.
  4. Cover with a saucer and leave to steep for three minutes.
  5. Lift out the bags without pressing them, then spoon out the ginger.
  6. Stir in the honey while the tea is hot, then squeeze in the lemon once the mug is off the boil.
  7. Add the lemon right at the end rather than during the steep, as hot water dulls the fresh citrus.
