Brewing the perfect cup
Water temperature80°C (use a thermometer or a temperature-controlled kettle; how fast boiled water cools depends on the amount of water and the kettle). Boiling water at 100°C destroys the delicate amino acids that give green tea its smooth, sweet character.
MeasureOne bag per 200ml of water (a standard mug). For loose leaf, use one heaped teaspoon.
Steep2 to 3 minutes, any longer and the cup turns bitter. Remove the bag promptly; do not squeeze.
ServiceNo milk and no sugar; the natural sweet grassy notes need nothing else. A slice of lemon brightens the cup if you prefer.
