Yerba Mate Without the Bitterness
South America's energising brew, green and grassy, steeped in cooler water so it never turns bitter.

Yerba mate is South America's answer to Coffee, a properly energising brew with a green, grassy, slightly smoky character. The one thing to get right is the water: never pour it boiling, as that scalds the leaf and turns it harsh and bitter.

Let the kettle sit for a minute or so to drop to around 80C, then steep for four minutes. Drunk clean it has a real lift to it, so it is a good morning cup if you want a change from tea or coffee.
You'll need
- 1 pyramid tea bag of Teapigs Yerba Mate
- 250ml freshly drawn water cooled to 80C
- 1 250ml mug, warmed
- 1 saucer for covering during steep
Method
- Warm your mug, boil the kettle, then let it stand for about a minute to drop to roughly 80C.
- Drop in one pyramid bag and pour the cooled water over.
- Cover and steep for four minutes.
- Lift out the bag, draining it against the rim.
- Drink it clean and unsweetened to taste it at its best.
- Tip: boiling water is the usual mistake; too hot and mate turns bitter, so always let the kettle cool first.
