Yerba mate is South America's answer to Coffee, a properly energising brew with a green, grassy, slightly smoky character. The one thing to get right is the water: never pour it boiling, as that scalds the leaf and turns it harsh and bitter.

Let the kettle sit for a minute or so to drop to around 80C, then steep for four minutes. Drunk clean it has a real lift to it, so it is a good morning cup if you want a change from tea or coffee.

You'll need

  • 1 pyramid tea bag of Teapigs Yerba Mate
  • 250ml freshly drawn water cooled to 80C
  • 1 250ml mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm your mug, boil the kettle, then let it stand for about a minute to drop to roughly 80C.
  2. Drop in one pyramid bag and pour the cooled water over.
  3. Cover and steep for four minutes.
  4. Lift out the bag, draining it against the rim.
  5. Drink it clean and unsweetened to taste it at its best.
  6. Tip: boiling water is the usual mistake; too hot and mate turns bitter, so always let the kettle cool first.
What you'll end up with: A clean, grassy cup of yerba mate with a real caffeine lift, brewed cool to keep it smooth.
