Loose leaf Green Tea rewards a gentle hand. A heaped teaspoon of these Ceylon green leaves in an infuser, water kept off the boil at around 80C, and three minutes is all it takes. Too hot or too long and green tea turns bitter; brewed gently it stays clean and grassy.

Method

  1. Warm a mug with hot water and tip it out.
  2. Boil the kettle, then let it cool for a minute to about 80C; green tea scalds and turns bitter at boiling point.
  3. Put a heaped teaspoon of leaves in an infuser and lower it into the mug.
  4. Pour the 80C water over, cover, and steep for three minutes.
  5. Lift the infuser out; do not leave the leaves sitting in the water, or it will over brew and turn bitter.
What you'll end up with: A pale, clear, grassy green cup, clean and smooth with no bitterness. Light and fresh, best drunk on its own.
