A grown-up soft drink worth keeping in mind: an alcohol-free spritz on fruity Rooibos, sharpened with lemon and a little raspberry syrup, then lengthened with sparkling water. Because rooibos has no caffeine, you can have a couple without it keeping you up, which makes it a good one to offer anyone not drinking. Shaking it over ice gives it a lively, frothy lift before the fizz goes in.

You'll need
- 2 tea bags of Tropical Sun Rooibos and Strawberry
- 150ml freshly drawn water at 100C, just off the boil
- 20ml fresh lemon juice
- 15ml light raspberry syrup
- 80ml cold sparkling water
- 3 fresh strawberry slices
- 1 250ml coupe glass, chilled in the freezer for ten minutes
- 1 cocktail shaker with cubed ice
- 1 saucer for covering during steep
Method
- Steep the 2 tea bags in 150ml just-boiled water for seven minutes under a saucer, then lift them out and let the brew cool.
- Fill a cocktail shaker with ice and add the cooled rooibos, the lemon juice and the raspberry syrup.
- Shake hard for about ten seconds, until frothy and cold.
- Strain into a chilled coupe.
- Top with the cold sparkling water.
- Drop in the strawberry slices and serve.
- Tip: a sprig of mint or a few raspberries on top make it look the part for guests.
