Strawberry Rooibos Spritz

A grown up soft drink worth keeping in mind: an alcohol free spritz on fruity Rooibos, sharpened with lemon and a little raspberry syrup, then lengthened with sparkling water. Because rooibos has no caffeine, you can have a couple without it keeping you up, which makes it a good one to offer anyone not drinking. Shaking it over ice gives it a lively, frothy lift before the fizz goes in.

You'll need

  • 2 tea bags of Tropical Sun Rooibos and Strawberry
  • 150ml freshly drawn water at 100C, just off the boil
  • 20ml fresh lemon juice
  • 15ml light raspberry syrup
  • 80ml cold sparkling water
  • 3 fresh strawberry slices
  • 1 250ml coupe glass, chilled in the freezer for ten minutes
  • 1 cocktail shaker with cubed ice
  • 1 saucer for covering during steep

Method

  1. Steep the 2 tea bags in 150ml just boiled water for seven minutes under a saucer, then lift them out and let the brew cool.
  2. Fill a cocktail shaker with ice and add the cooled rooibos, the lemon juice and the raspberry syrup.
  3. Shake hard for about ten seconds, until frothy and cold.
  4. Strain into a chilled coupe.
  5. Top with the cold sparkling water.
  6. Drop in the strawberry slices and serve.
  7. Tip: a sprig of mint or a few raspberries on top make it look the part for guests.
