Spiced Chai Hot Toddy
A spiced chai hot toddy with dark rum, honey and lemon, the chai spices meeting the rum halfway. Alcohol free option included.

A hot toddy is the classic thing for a cold night, and chai makes a particularly good one. The tea already carries cinnamon, ginger and cardamom, so it meets a measure of spiced dark rum halfway, with honey and lemon rounding it off.

Keep the rum to a single shot and stir it in at the end, off the heat, so you do not cook off the alcohol. For an alcohol free version, a splash of warm apple juice gives the same warmth and a little sweetness.
You'll need
- 1 tea bag of PG Tips Chai Special Blend
- 200ml freshly drawn water at 100C, just off the boil
- 1 teaspoon of clear honey
- 15ml fresh lemon juice
- 30ml warm spiced dark rum (or 30ml warm apple juice for alcohol free)
- 1 cinnamon stick, for stirring
- 1 tall 250ml glass mug, warmed
- 1 saucer for covering during steep
Method
- Warm a sturdy glass or mug, then steep the chai bag in 200ml of just boiled water for five minutes, covered.
- Lift out the bag and stir in the honey and lemon juice while it is hot.
- Off the heat, stir in the warm rum, or warm apple juice for an alcohol free toddy.
- Drop in a cinnamon stick to stir, and serve warm.
- Tip: add the rum at the end rather than while it is on the heat, so it keeps its kick.
