Exact quantities, then the method.
Cold moringa green tea takes really well to fresh ginger, which adds a gentle warmth and a bit of bite to its mellow, leafy flavour. As with any green tea, the key is to brew it just off the boil so it never turns harsh, then chill it fully before it meets the ice.

A squeeze of lemon and a sprig of mint keep everything bright. Makes one tall glass; add honey only if you like it sweet.
You'll need
- 2 Dalgety Moringa with Green Tea bags
- 200ml freshly drawn water, brought to a rolling boil, then cooled to about 80C (check with a thermometer)
- 2 fresh ginger root coins, peeled and gently crushed (about 15g)
- 1 half-slice of fresh lemon, for the rim
- 1 fresh mint sprig, for the glass
- Optional: 1 teaspoon of clear runny honey, stirred into the warm brew before cooling
- 1 tall 400ml tumbler, chilled in the freezer for ten minutes
- Enough cubed ice to fill the tumbler (about 250g)
- 1 wide paper or metal straw
Equipment
- 1 small heatproof jug
Method
- While the moringa brews, chill a tall glass in the freezer.
- Boil 200ml of water for the moringa and let it fall to about 80C; a thermometer or a temperature control kettle will confirm it.
- Put two tea bags and two crushed ginger coins in a small jug, pour the water over, cover, and steep for three minutes.
- Lift out the bags without pressing them, then remove the ginger. Stir in a teaspoon of honey now if you want it sweet.
- Stand the jug in a bowl of cold water to cool the brew to room temperature.
- Fill the chilled glass with ice, pour the cooled tea over, then hook a lemon slice on the rim and stand a mint sprig in the ice.
- Drink it the same day while it still tastes lively; the green tea loses its lift if it sits overnight.
