Iced Moringa Cooler with Ginger

You'll need
- 2 Dalgety Moringa with Green Tea bags
- 200ml freshly drawn water, brought to a rolling boil then left for 2 minutes to drop to about 80C
- 2 fresh ginger root coins, peeled and gently crushed (about 15g)
- 1 half slice of fresh lemon, for the rim
- 1 fresh mint sprig, for the glass
- Optional: 1 teaspoon of clear runny honey, stirred into the warm brew before cooling
- 1 tall 400ml tumbler, chilled in the freezer for ten minutes
- Enough cubed ice to fill the tumbler (about 250g)
- 1 small heatproof jug
- 1 wide paper or metal straw
Method
- Chill a tall glass in the freezer while you brew.
- Boil 200ml of water, then let the kettle rest for two minutes so it falls to around 80C.
- Put two tea bags and two crushed ginger coins in a small jug, pour the water over, cover, and steep for three minutes.
- Lift out the bags without pressing them, then remove the ginger. Stir in a teaspoon of honey now if you want it sweet.
- Stand the jug in a bowl of cold water to cool the brew to room temperature.
- Fill the chilled glass with ice, pour the cooled tea over, then hook a lemon slice on the rim and stand a mint sprig in the ice.
- Drink it the same day while it still tastes lively; the green tea loses its lift if it sits overnight.
