Iced Moringa Cooler with Ginger

Method

  1. Chill a tall glass in the freezer while you brew.
  2. Boil 200ml of water, then let the kettle cool to around 80C (check with a thermometer or use a temperature controlled kettle).
  3. Put two tea bags and two crushed ginger coins in a small jug, pour the water over, cover, and steep for three minutes.
  4. Lift out the bags without pressing them, then remove the ginger. Stir in a teaspoon of honey now if you want it sweet.
  5. Stand the jug in a bowl of cold water to cool the brew to room temperature.
  6. Fill the chilled glass with ice, pour the cooled tea over, then hook a lemon slice on the rim and stand a mint sprig in the ice.
  7. Drink it the same day while it still tastes lively; the green tea loses its lift if it sits overnight.
