Iced Lemon and Ginger
A homemade low sugar ginger ale: a strong lemon and ginger brew chilled and topped with soda. Caffeine free, with an easy adult swap.

Iced lemon and ginger is basically a homemade ginger ale with none of the sugar load: a strong lemon and ginger brew, chilled and lengthened with soda, all bright citrus and a clean ginger bite. Caffeine free as it is, with an easy adult version using a measure of vodka or dark rum.

It uses Teapigs Lemon and Ginger, a pure caffeine free infusion. Ten minutes plus chilling, and it makes a jug.
You'll need
- 4 Teapigs Lemon and Ginger tea temples
- 500ml rolling boil water
- 2 thin slices of fresh ginger
- 2 tablespoons honey, to taste
- 500ml chilled soda water
- Ice, lemon wheels and mint, to serve; optional 50ml vodka or dark rum per glass
Method
- Steep the 4 temples and the fresh ginger slices in 500ml rolling boil water, covered, for 7 minutes for a strong, properly gingery base.
- Lift the temples and ginger out and stir the honey through while warm.
- Cool to room temperature, then chill until cold.
- Fill tall glasses or a jug with ice and divide the lemon and ginger base, then top with chilled soda water.
- Stir gently, garnish with lemon wheels and mint. For an adult long drink, add 50ml vodka or dark rum to the glass before the soda.
- Caffeine free as a soft drink; the brewed base keeps 3 days in the fridge.
