Fennel Gin Spritz (Tropical Sun, Adult Cocktail)
A gin spritz lengthened with chilled fennel tea and soda; the aniseed echoes the gin's own botanicals.

Fennel and gin belong together: the sweet aniseed picks up on the botanicals already in the bottle, so a splash of chilled Tropical Sun Fennel makes a gin spritz taste herbal and whole rather than sharp. Build it long over ice with soda, with a single measure of gin per glass.

You'll need
- 2 tea bags of Tropical Sun Fennel
- 200ml freshly boiled water (100C)
- 1 teaspoon honey, to balance
- 50ml gin (25ml per glass)
- Chilled soda water, to top
- Lemon slices and plenty of ice
Method
- Steep the 2 fennel bags in the boiled water for 5 minutes, then lift them out and stir in the honey while warm.
- Leave the fennel tea to cool, then chill it well.
- Fill two tall glasses with ice and divide the chilled fennel tea and the gin between them.
- Top each glass with chilled soda water and stir once.
- Finish with lemon slices and serve straight away. One glass each.
- Use a London Dry gin rather than a flavoured gin; the juniper keeps the aniseed in balance rather than competing with it.
