A rooibos spritz is a tall, citrusy refresher built on chilled rooibos in place of wine or spirits. Unlike Black Tea, rooibos won't turn bitter or cloud up over ice, so it stays clean and clear, which makes it a surprisingly good base for an alcohol-free spritz.

It uses Tetley Redbush Pure, Rainforest Alliance certified rooibos from South Africa's Western Cape, and scales straight up to a jug for a crowd. There's an easy adult version at the end.

You'll need

  • 4 Tetley Redbush Pure rooibos tea bags
  • 250ml just boiled water
  • 2 tablespoons honey or agave syrup, to taste
  • Juice of 1 orange, about 80ml
  • Juice of half a lemon
  • 300ml chilled soda or sparkling water
  • Ice, orange wheels and a sprig of rosemary or mint, to serve
  • Optional adult version: 50ml gin or spiced rum per glass

Method

  1. Steep the 4 rooibos bags in 250ml just boiled water for 8 minutes for a strong base. Stir the honey through while hot so it dissolves, then cool and chill until cold.
  2. Combine the chilled rooibos with the orange and lemon juice in a jug and stir.
  3. Fill two tall glasses with ice and divide the rooibos mix between them, roughly 120ml each.
  4. Top each glass with chilled soda water and stir once, gently, to keep the fizz.
  5. Garnish with an orange wheel and a sprig of rosemary or mint.
  6. For an adult spritz, add 50ml gin or spiced rum to the glass before the soda water.
What you'll end up with: A fizzy, deep amber spritz with bright citrus, a touch of honey and rounded rooibos behind it. Caffeine-free as a mocktail, or add gin or spiced rum for an adult version. The base keeps in the fridge for up to three days.
