Brewing the perfect cup
Stovetop (traditional)Pour 250ml of whole milk and 50ml of water into a small pan; add 2 tea bags plus a cracked cardamom pod, warm over a low heat for 5 to 7 minutes until shivering at the edges. Strain into a small cup.
Mug brewSteep 2 tea bags in 50ml of just-boiled water for 5 minutes, remove the bags, then top with 150ml of steamed milk or hot dairy alternative.
Iced chaiBrew strong with 100ml of hot water, cool, pour over ice, top with 200ml of cold milk and a tablespoon of maple syrup.
Dirty chaiPour a shot of espresso into the bottom of a mug, then top with hot milky chai. Sweeten with brown sugar if needed.
SweetenerBrown sugar, honey or maple syrup all work; avoid white sugar, it flattens the spice profile.
