Spiced Chai Porridge
Porridge cooked in strong chai instead of water, so the spice runs through the bowl. Topped with honey and nuts, a warming winter breakfast.

Spiced chai porridge cooks the oats in a strong chai brew instead of plain water, so the cinnamon, cardamom and ginger run right through the bowl. A spoon of honey and a handful of pecans on top make it a properly warming weekday breakfast, ready in under ten minutes.

It uses PG Tips Chai Special Blend, a Black Tea and chai spice blend. Serves 1, ready in about 8 minutes.
You'll need
- 2 PG Tips Chai tea bags
- 300ml just boiled water
- 50g porridge oats
- 100ml milk or oat milk
- 1 to 2 teaspoons honey, to taste
- A handful of pecans or chopped almonds, and a pinch of cinnamon, to serve
Method
- Steep the 2 chai bags in 300ml just boiled water for 4 minutes for a strong, deeply spiced brew, then squeeze and remove.
- Tip the oats into a small pan and pour in the hot chai brew. Bring to a gentle simmer, stirring.
- Simmer 3 to 4 minutes, stirring often, until the oats have drunk most of the chai and the porridge is thick.
- Stir in the milk to loosen and warm it through; do not boil hard or it catches.
- Stir the honey through, then spoon into a bowl.
- Top with chopped pecans or almonds and a final pinch of cinnamon; eat warm.
