The Story Behind Pukka
Pukka built its shelf position on organic certification and on blends named for a purpose rather than a flavour, which makes the Three range the odd corner of the catalogue: these are named for what is in them and nothing else. Chamomile has a long traditional use as an evening drink across Europe and the Middle East, and a pure chamomile is the version of it that most rewards attention, because there is nowhere for a thin brew to hide behind other botanicals.
The home compostable bag is the other thing the pack name is telling you, and it is a genuine distinction rather than a marketing one. Industrially compostable material needs the sustained heat of a commercial facility to break down; home compostable material is specified to break down in a garden heap at ambient temperature.

What You Are Actually Buying
- Count: That is several times an everyday black tea, which is the honest position on a small organic single-botanical box.
- One plant only: no supporting botanicals, no flavouring and nothing to soften or complicate the flower. If you have only ever had chamomile as part of a blend, this will taste more concentrated than you expect.
- Caffeine-free: there is no tea leaf in it, so no caffeine rather than a reduced amount. Genuinely different from a decaf.
- What it is not: not a medicine, not a sleeping aid, and not a tea in the botanical sense. It is a pure chamomile infusion.
Getting It Right in the Cup
- Water temperature: 100 degrees Celsius, straight off the boil.
- Measure: one bag, 200 to 250ml.
- Steep: five minutes minimum, ten for the full cup. It will not turn bitter.
- Milk: no. There is no tannin for milk to soften and it muddies a cup whose clarity is most of the appeal.
- Storage: sealed, cool, dark and dry. Dried flowers fade in aroma faster than black tea leaf, so drink the box within months rather than years.
- Best with: the last hour of the evening, after a heavy meal, or any hour when a caffeinated drink would be a mistake.

How to make The Long Evening Cup with Pukka Organic Three Chamomile.
- 1 bag Pukka Organic Three Chamomile
- 200 to 250ml water straight off the boil
- Pour water straight off the boil over one bag in a warmed cup.
- Cover with a saucer and steep for 8 to 10 minutes rather than the usual three.
- Lift the bag out and taste before adding anything; it is sweeter than you expect.
What you'll end up with: The version of chamomile most people have never actually had, because they take the bag out too early.
The Long Pot
How to make The Long Pot with Pukka Organic Three Chamomile.
- 2 bags Pukka Organic Three Chamomile
- 500ml water straight off the boil
- Warm the pot with a splash from the kettle and pour it away.
- Steep 2 bags in 500ml for 10 minutes with the lid on.
- Leave the bags in; there is no tannin to turn it bitter as it stands.
What you'll end up with: A pot that is still good half an hour later, which a black tea never is.
Overnight Cold Brew
How to make Overnight Cold Brew with Pukka Organic Three Chamomile.
- 2 bags Pukka Organic Three Chamomile
- 500ml cold water
- A slice of lemon
- Drop 2 bags into a jug of 500ml cold water.
- Leave in the fridge for 8 hours or overnight.
- Serve over ice with a slice of lemon.
What you'll end up with: Clear, sweet and faintly appley, with none of the grassy note a rushed hot brew gives.
Chamomile, Lemon and Honey
How to make Chamomile, Lemon and Honey with Pukka Organic Three Chamomile.
- 1 bag Pukka Organic Three Chamomile
- 250ml water straight off the boil
- Half a teaspoon honey
- Juice of half a lemon
- Steep 1 bag in 250ml for 8 minutes, covered.
- Stir in half a teaspoon of honey while the cup is hot, which is half what you would use on a blended chamomile.
- Add the lemon juice last, off the heat, so it stays bright.
What you'll end up with: The comfort drink for a scratchy throat, with no caffeine and very little added sugar.
Chamomile Poached Pears
How to make Chamomile Poached Pears with Pukka Organic Three Chamomile.
- 3 bags Pukka Organic Three Chamomile
- 600ml water
- 120g caster sugar
- 4 firm pears, peeled
- A strip of lemon peel
- Steep 3 bags in 600ml of water straight off the boil for 10 minutes, then lift them out.
- Dissolve the sugar in the warm infusion with the lemon peel; use less sugar than a standard syrup, because the flower brings its own.
- Poach the peeled pears at a bare simmer for 25 to 30 minutes until tender, then reduce the syrup by half to serve.
What you'll end up with: Pale gold pears with a honeyed floral syrup. The chamomile does the job vanilla usually does, more quietly.
Chamomile Custard
How to make Chamomile Custard with Pukka Organic Three Chamomile.
- 3 bags Pukka Organic Three Chamomile
- 500ml whole milk
- 4 egg yolks
- 60g caster sugar
- •1 teaspoon cornflour
- Warm the milk to just below a simmer, take it off the heat, add the 3 bags and infuse for 15 minutes.
- Lift the bags out, whisk the yolks, sugar and cornflour together and pour the warm infused milk over them.
- Return to a low heat and stir until it coats the back of a spoon; do not let it boil.
What you'll end up with: A floral custard for poached fruit or a crumble. Infusing the milk rather than water is what carries the flower.
