What You Are Actually Buying
- Forty bags, forty grams: one gram a bag, which is light and is meant to be.

- Certified organic: the brand states it in the product name. The certifying body and any further marks are on the box.

Getting It Right in the Cup
- Water temperature: 100°C, straight off the boil.
- Measure: one bag per 200ml. Do not stretch a one gram bag across a big mug.

- 1 bag Pukka Organic Night Time
- 200ml water straight off the boil
- A saucer to cover the mug
- Pour 200ml of water straight off the boil over one bag, using 200 rather than 250 because the bag is only a gram.
- Cover the mug with a saucer, which keeps the flower aromatics in the liquid instead of in the kitchen.
- Leave it five minutes, or longer; there is nothing in it that can turn bitter.
- Taste before adding honey.
What you'll end up with: A soft, faintly apple-sweet cup with nothing sharp in it anywhere. The smaller mug and the saucer are the two things that make a one gram bag work.

- 3 bags Pukka Organic Night Time
- 500ml water straight off the boil
- A strip of lemon peel
- Use three bags rather than two, because a one gram bag does not stretch across a pot the way a heavier one does.
- Steep six minutes with the lid on, then lift all three bags out before the first pour.
- Drop in a strip of lemon peel, not juice, because acid flattens chamomile.

Cold Brew Jug

- 6 bags Pukka Organic Night Time
- 1 litre cold water
- 2 apple slices
- Ice to serve
- Drop six bags into a litre jug of cold water with the apple slices.
- Leave it in the fridge overnight, eight hours or so.
- Lift the bags out in the morning and serve over ice.
What you'll end up with: Sweeter and rounder than the hot version, and much closer to an apple drink than to a tea. The apple slices are not cheating; they are drawing out what is already there.
Chamomile Custard
How to make Chamomile Custard with Pukka Organic Night Time.
- 4 bags Pukka Organic Night Time
- 400ml whole milk
- 4 egg yolks
- 60g caster sugar
- Warm the milk to just below a simmer, take it off the heat and steep the four bags in it for fifteen minutes.
- Squeeze the bags out and discard them, then whisk the yolks and sugar together in a bowl.
- Pour the warm chamomile milk onto the yolks, whisking, then return it to a low heat and stir until it coats the back of a spoon.
What you'll end up with: A custard that tastes gently of apples and hay and puzzles everyone who eats it. Chamomile is one of the few infusions strong enough to survive dairy and eggs.
Chamomile Poached Apricots
How to make Chamomile Poached Apricots with Pukka Organic Night Time.
- 4 bags Pukka Organic Night Time
- 500ml just boiled water
- 3 tablespoons honey
- 8 apricots, halved and stoned
- Steep four bags in 500ml for ten minutes, then remove them and stir in the honey.
- Simmer the apricot halves in the liquor for eight to ten minutes until they are soft but still holding.
- Reduce the liquor after lifting the fruit out, and spoon it over.
What you'll end up with: Apricots and chamomile share the same soft stone-fruit note, so this tastes more concentrated than it has any right to. Good warm, better cold the next day.
Chamomile Bath Infusion
How to make Chamomile Bath Infusion with Pukka Organic Night Time.
- 6 bags Pukka Organic Night Time
- 500ml just boiled water
- A handful of Epsom salts
- Steep six bags in 500ml for ten minutes to make a strong concentrate.
- Pour the concentrate into a running bath along with the salts.
- Drop the used bags in as well and leave them there.
What you'll end up with: A use for the end of a box rather than the start of one. It scents the water properly, which a handful of dried flowers thrown in loose does not.
