The Story Behind Clipper
Clipper built its name on organic certification and on being loud about what goes into the bag as well as into the cup, and this blend sits in the part of its range that names its botanicals on the front of the box rather than hiding them behind a mood word.
The word Organic is in the product name, so that much the brand states. Whether it also carries Soil Association, Fairtrade or any other mark, what the bags are made of, and the full allergen advice all have to be read off the current UK pack rather than taken from this page. What You Are Actually Buying
- Twenty bags, thirty grams: one and a half grams a bag, the standard dose for a light flower infusion.
- Certified organic: the brand states it in the product name. The certifying body and any additional marks are printed on the box.
- Naturally caffeine free: there is no tea leaf in it, so there was no caffeine to remove and nothing has been decaffeinated.

Getting It Right in the Cup
- Water temperature: 100°C, straight off the boil.
- Measure: one bag per 200 to 250ml.
- Steep: four to five minutes covered, then remove the bag rather than leaving it.
- Milk: no. It muddies all three botanicals at once.
- If the lavender is too much: steep three minutes instead of five, or add a plain chamomile bag alongside it to dilute the floral without weakening the cup.
- Iced: brew three bags in 350ml for six minutes, cool, then pour over ice. Lavender is more forgiving cold than hot and this is a genuinely good summer drink.
- Storage: sealed, cool, dark, and on its own. Lavender will scent whatever is stored beside it, and a box of black tea kept next to this will taste of it within a month.
- Best with: the hour before bed, a long bath, or as the cup that replaces a late coffee.

- 1 bag Clipper Organic Sleep Time
- 250ml just boiled water
- A saucer to cover the mug
- Pour 250ml of water straight off the boil over one bag of Clipper Organic Chamomile, Lemon & Lavender Sleep Time 20, 30g.
- Cover the mug and steep for 4 to 5 minutes.
- Lift the bag out at five minutes. This is the step that decides between florals and perfume.
- Drink clear. Taste before adding honey; the chamomile is sweeter than people expect.
What you'll end up with: A balanced cup where chamomile leads and lavender sits behind it. Leave the bag in and the order reverses.
The Two-Cup Pot
How to make The Two-Cup Pot with Clipper Organic Chamomile, Lemon & Lavender.
- 2 bags Clipper Organic Sleep Time
- 500ml just boiled water
- A strip of lemon peel
- A warmed teapot with a lid
- Warm the pot with a swirl of boiling water and tip it out.
- Add 2 bags of Clipper Organic Chamomile, Lemon & Lavender Sleep Time 20, 30g and 500ml of water off the boil. That is a gentler ratio than the mug on purpose, because lavender concentrates in a pot.
- Steep 5 minutes with the lid on, then lift both bags out before the first pour.
- Drop in a strip of lemon peel at the end. Peel, not juice: acid flattens lavender rather than lifting it.
What you'll end up with: A pot that will sit for an hour without turning bitter, because there is no tannin in it to turn. It suits an evening that runs long.
Iced Lavender Lemonade

- 3 bags Clipper Organic Sleep Time
- 350ml just boiled water
- Ice, a full glass of it
- Juice of 1 lemon
- Sugar to taste
- Brew 3 bags of Clipper Organic Chamomile, Lemon & Lavender Sleep Time 20, 30g in 350ml of just boiled water for 6 minutes, covered.
- Sweeten lightly while hot if you are sweetening at all. Sugar will not dissolve in cold tea.
- Cool, then chill, then add the juice of 1 lemon.
- Pour over a full glass of ice.
What you'll end up with: Lavender is more forgiving cold than hot, so this is the build that converts people who found the hot cup too perfumed.
Lavender And Lemon Shortbread
How to make Lavender And Lemon Shortbread with Clipper Organic Chamomile, Lemon & Lavender.
- 2 bags Clipper Organic Sleep Time, opened
- 200g plain flour
- 140g cold butter
- 70g caster sugar
- Zest of 1 lemon
- Snip 2 bags of Clipper Organic Chamomile, Lemon & Lavender Sleep Time 20, 30g open and tip the contents into the sugar. The bag cut is already fine enough to bake with.
- Rub 140g of cold butter into 200g of plain flour, then stir in the infused sugar and the zest of 1 lemon.
- Press into a lined tin, prick all over and chill 20 minutes.
- Bake at 160°C for 25 minutes until pale gold, then cut while warm.
What you'll end up with: Butter is the right carrier for lavender, which is why lavender shortbread works where lavender cake often does not. Two bags is plenty; three would be soap.
Chamomile Custard For Poached Fruit
How to make Chamomile Custard For Poached Fruit with Clipper Organic Chamomile, Lemon & Lavender.
- 3 bags Clipper Organic Sleep Time
- 400ml whole milk
- 4 egg yolks
- 60g caster sugar
- 1 teaspoon cornflour
- Heat 400ml of whole milk to just below a simmer, drop in 3 bags of Clipper Organic Chamomile, Lemon & Lavender Sleep Time 20, 30g and take it off the heat.
- Infuse 15 minutes, then lift the bags out and squeeze them gently.
- Whisk 4 egg yolks with 60g of caster sugar and 1 teaspoon of cornflour, pour the warm milk over whisking constantly, then return to a low heat.
- Stir until it coats the back of a spoon. Do not let it boil.
What you'll end up with: A pale floral custard for poached pears or roasted apricots. Milk is the one place these botanicals belong, which is the exact opposite of the advice for the cup.
