What decaffeination does to the cup

The caffeine is taken out of the green coffee before it is roasted, and a little of the material that becomes aroma goes with it, so decaf tends to smell softer than a caffeinated coffee roasted to the same colour. Caffeine is also bitter in its own right. Take it away and part of what people read as strength goes too, which is why a poorly made decaf can taste hollow in the middle.
