Iced Sweet Ginger Fizz
Strong ginger tea over ice, sweetened with honey and lengthened with soda and lemon, like a homemade ginger ale with a fresh bite.

This is about as close as you will get to a proper homemade ginger ale, without the manufactured fizz and sugar. You brew the ginger tea strong with a coin of fresh ginger, sweeten it lightly with honey, cool it right down, then pour it over ice and lengthen it with soda water.

A wheel of lemon at the end sharpens the whole thing up. It is the kind of drink you want on a hot afternoon, and the fresh ginger gives it a warm bite at the back that bottled ginger drinks never quite manage.
You'll need
- 2 pyramid tea bags of Teapigs Sweet Ginger
- 200ml freshly drawn water at 100C, just off the boil
- 200ml cold soda water
- 1 thin coin of fresh root ginger, peeled
- 1/2 teaspoon of clear honey
- 1 fresh lemon wheel
- 1 tall 450ml glass, chilled in the freezer for ten minutes
- Enough cubed ice (about 250g)
- 1 small jug for steeping, 1 saucer for covering
Method
- Chill a tall glass in the freezer for ten minutes.
- Steep two pyramid bags and a coin of fresh ginger in 200ml of just boiled water for seven minutes, covered.
- Lift out the bags, leaving the ginger in, and stir in the honey while the tea is warm.
- Stand the jug in cold water for five minutes to cool it down.
- Fill the chilled glass with ice and pour the ginger tea over.
- Top with soda water, pouring down the back of a spoon to keep the fizz.
- Slip in a lemon wheel and serve with a long spoon.
- Tip: for more punch, grate a little extra fresh ginger into the brew before you chill it.
