Iced Lemon Balm Tea

Lemon balm is one of those herbs that smells of summer the moment you brush past it in the garden, all soft lemon and freshness. Brewed and chilled, it makes a gentle, citrusy iced tea that is soft rather than sharp. A wheel of lemon and a sprig of the balm itself, or mint if that is what you have, keep it lively. Brew it strong so the flavour carries through the ice.

You'll need

  • 2 pyramid tea bags of Teapigs Happy Tea With Lemon Balm
  • 200ml freshly drawn water at 100C, just off the boil
  • 200ml cold still water
  • 1 fresh lemon wheel
  • 1 fresh lemon balm sprig (or mint sprig as substitute)
  • 1 tall 450ml glass, chilled in the freezer for ten minutes
  • Enough cubed ice (about 250g)
  • 1 small jug for steeping, 1 saucer for covering

Method

  1. Steep the 2 pyramid bags in 200ml just boiled water for seven minutes under a saucer, then lift them out.
  2. Cool the brew right down in cold water or the fridge.
  3. Fill a tall glass with ice and pour the cooled tea over.
  4. Lengthen with the cold water, easing it in down the back of a spoon.
  5. Add the lemon wheel and a sprig of lemon balm or mint, gently bruised to release the scent.
  6. Tip: if you grow lemon balm, steep a small handful of fresh leaves with the bags for extra fragrance.
What you'll end up with: A gentle, lemony glass of iced lemon balm tea, fresh and gentle on a warm afternoon.
