Iced Spiced Winter Red

This is a spiced Rooibos iced tea: all the cinnamon and clove of the winter blend, but served long and cold with orange and lemon. Because rooibos never turns bitter or cloudy over ice, you don't even need to crash it cold the way you would Black Tea, so it stays clear and gently sweet with no astringency.

You'll need

  • 4 Teapigs Spiced Winter Red tea temples
  • 500ml just boiled water
  • 500ml cold water
  • 1 to 2 tablespoons honey, optional
  • Orange and lemon slices, plus ice, to serve

Method

  1. Steep the 4 temples in 500ml just boiled water for 7 minutes. Rooibos cannot over brew, so a long, strong steep gives full spice that survives dilution.
  2. Lift the temples out and stir in the honey while the tea is warm, if using.
  3. Cool to room temperature, then chill until cold. There is no need to crash it over ice, as rooibos will not turn cloudy like black tea.
  4. Stir in the 500ml cold water and add the citrus slices.
  5. Serve over plenty of ice. Because it is caffeine free, this is an all day and evening iced drink.
  6. The brewed base keeps 3 days in the fridge.
What you'll end up with: A clear, spiced rooibos iced tea, its warm spice lifted with bright citrus, never bitter or cloudy and free of caffeine.
