Iced Spiced Winter Red

You'll need
- 4 Teapigs Spiced Winter Red tea temples
- 500ml just boiled water
- 500ml cold water
- 1 to 2 tablespoons honey, optional
- Orange and lemon slices, plus ice, to serve
Method
- Steep the 4 temples in 500ml just boiled water for 7 minutes. Rooibos cannot over brew, so a long, strong steep gives full spice that survives dilution.
- Lift the temples out and stir in the honey while the tea is warm, if using.
- Cool to room temperature, then chill until cold. There is no need to crash it over ice, as rooibos will not turn cloudy like black tea.
- Stir in the 500ml cold water and add the citrus slices.
- Serve over plenty of ice. Because it is caffeine free, this is an all day and evening iced drink.
- The brewed base keeps 3 days in the fridge.
