
A spiced chai hot chocolate melts good dark chocolate into a strong Rooibos chai brew before the milk goes in, so every mouthful tastes of chocolate and warm spice at once. It's caffeine-free, since the bag is rooibos, and ready in under ten minutes.

It uses Good Earth Rooibos Chai, a caffeine-free spiced rooibos blend. Serves 1.
You'll need
- 1 Good Earth Rooibos Chai tea bag
- 120ml rolling boil water
- 25g good dark chocolate (70 percent), chopped
- 200ml milk of your choice
- 1 teaspoon honey or sugar, optional
- A small pinch of cinnamon and a marshmallow, to serve
Method
- Steep the bag in 120ml rolling boil water, covered, for 5 minutes for a strong spiced concentrate, then squeeze and remove.
- Drop the chopped chocolate into the hot concentrate and stir until fully melted; the spiced tea melts chocolate.
- Stir in the honey if you want it sweeter, then warm the milk in a small pan to just below a simmer.
- Pour the warmed milk into the chocolate chai mix, whisking gently to combine into a smooth, creamy drink.
- Pour into a mug, dust with cinnamon and float a marshmallow on top.
