Fennel and liquorice is the cup to reach for after a big meal. It is caffeine-free, and the liquorice does something clever: it makes the brew taste naturally sweet without a grain of added sugar, so there is nothing to add. People have been drinking this after dinner for centuries, and it is easy to see why. Give it a good five minutes, as herbal blends take their time to open up.

You'll need
- 1 pyramid tea bag of Teapigs Fennel and Liquorice
- 250ml freshly drawn water at 100C, just off the boil
- 1 250ml mug, warmed
- 1 saucer for covering during steep
Method
- Warm your mug with a splash of hot water and pour it away.
- Add 250ml of water straight off the boil; herbal blends like the full heat.
- Drop in the pyramid bag and cover with a saucer.
- Leave it a good five minutes, longer if you like it stronger, as there is no caffeine to turn it harsh.
- Lift the bag out and drink it as it is, with nothing added.
- Tip: drop in a star anise while it steeps if you want the aniseed note to sing.
