Lemongrass and Coconut Latte
A dairy free, caffeine free latte: strong lemongrass tea topped with frothed coconut milk and a little honey, a Thai pairing in a mug.

Lemongrass and coconut are a classic Thai pairing, and they work just as well warm in a mug as they do in a curry. You brew the lemongrass right down to a strong little concentrate, then top it with frothed coconut milk so the grassy citrus and the creamy coconut meet in the middle.

A spoon of honey ties it together. It is dairy free, caffeine free and a bit different, the sort of thing to make when an ordinary cup of tea will not do.
You'll need
- 2 pyramid tea bags of Teapigs Pure Lemongrass (for concentrate)
- 100ml freshly drawn water at 100C, just off the boil
- 180ml barista coconut milk
- 1 teaspoon of clear honey
- 1 280ml mug, warmed
- 1 small saucepan and a saucer for covering
- 1 small balloon whisk or milk frother
Method
- Warm your mug. Steep two pyramid bags in just 100ml of just boiled water for six minutes, covered, for a strong concentrate.
- Lift out the bags, press gently, and stir the honey into the concentrate.
- Heat the coconut milk until steaming but not boiling, and froth it until smooth.
- Pour the concentrate into the mug and top with the frothed coconut milk.
- Tip: use barista coconut milk; the carton kind froths far better than tinned, which can be too thick.
