Earl Grey Latte (London Fog)

An Earl Grey latte, often called a London Fog, is one of the loveliest tea lattes: strong Earl Grey softened with steamed milk and a touch of honey, the bergamot coming through the foam. Brew the tea concentrated, sweeten it lightly, then top with frothed milk.

Orange-blossom honey is a lovely match for the bergamot if you have it, but any honey works. Makes one mug.

You'll need

  • 2 tea bags of Lipton Black Earl Grey With Italian Bergamot (for concentrate)
  • 100ml freshly drawn water at 100C, just off the boil
  • 200ml whole milk
  • 1 teaspoon of light orange-blossom honey (or plain clear honey)
  • 1 300ml mug, warmed
  • 1 small saucepan and a saucer for covering
  • 1 small balloon whisk or milk frother

Method

  1. Warm a mug. Steep two tea bags in 100ml of freshly boiled water for four minutes to make a strong concentrate, then lift them out.
  2. Stir a little honey into the hot concentrate until it dissolves.
  3. Warm the milk until it just steams, then froth it into a silky foam.
  4. Pour the concentrate into the mug and top with the frothed milk over the back of a spoon.
  5. Orange-blossom honey suits the bergamot especially well, but any honey is fine.
What you'll end up with: A soft, milky cup with the bergamot of the Earl Grey rising gently through the foam and a light honey sweetness. Comforting and fragrant, the classic London Fog.
