Earl Grey Latte (London Fog)
An Earl Grey latte, or London Fog: strong bergamot tea topped with frothed milk and a little honey, the citrus coming through the foam.

An Earl Grey latte, often called a London Fog, is one of the loveliest tea lattes: strong Earl Grey softened with steamed milk and a touch of honey, the bergamot coming through the foam. Brew the tea concentrated, sweeten it lightly, then top with frothed milk.

Orange blossom honey is a lovely match for the bergamot if you have it, but any honey works. Makes one mug.
You'll need
- 2 tea bags of Lipton Black Earl Grey With Italian Bergamot (for concentrate)
- 100ml freshly drawn water at 100C, just off the boil
- 200ml whole milk
- 1 teaspoon of light orange blossom honey (or plain clear honey)
- 1 300ml mug, warmed
- 1 small saucepan and a saucer for covering
- 1 small balloon whisk or milk frother
Method
- Warm a mug. Steep two tea bags in 100ml of freshly boiled water for four minutes to make a strong concentrate, then lift them out.
- Stir a little honey into the hot concentrate until it dissolves.
- Warm the milk until it just steams, then froth it into a silky foam.
- Pour the concentrate into the mug and top with the frothed milk over the back of a spoon.
- Orange blossom honey suits the bergamot especially well, but any honey is fine.
