A London Fog is an Earl Grey latte: a strong bergamot black tea, steamed or frothed milk, and a little vanilla and sweetener. The whole thing rises or falls on the base tea, so brew it stronger than a normal cup, the bergamot has to carry through the milk, and a thin Earl Grey simply disappears. Strong, assertive Earl Greys work best; lighter or Darjeeling based ones make a more delicate, floral version. Oat milk froths well and suits the bergamot; whole dairy is the smoothest.
