Italian Bergamot Earl Grey Cordial

A homemade Earl Grey and lemon cordial; brew it strong, cook it down with sugar and zest, then dilute for a fragrant lemonade.

Italian Bergamot Earl Grey Cordial

Make a bottle of this and you have Earl Grey lemonade on tap all week. It is a proper cordial: the tea is brewed hard, then cooked down with sugar and plenty of lemon zest until it turns syrupy and fragrant, ready to be let down with cold or fizzy water whenever you fancy a glass. The bergamot in the Lipton blend does a lot of the work, lifting the lemon with its soft, floral citrus note.

One part cordial to four parts water is the starting point; go stronger or weaker to taste. It keeps about a fortnight in the fridge.

You'll need

  • 4 tea bags of Lipton Black Earl Grey With Italian Bergamot
  • 500ml freshly drawn water at 100C, just off the boil
  • 250g caster sugar
  • Zest of 2 fresh lemons, finely grated
  • 30ml fresh lemon juice
  • 1 medium saucepan
  • 1 fine sieve lined with muslin for straining
  • 1 sterilised 500ml glass bottle with cap
  • 1 saucer for covering the steep

Method

  1. Steep 4 tea bags in 500ml of just boiled water for 5 minutes, covered.
  2. Lift out the bags, pressing them to get a strong, dark brew.
  3. Tip the brew into a saucepan with the sugar, lemon zest and lemon juice.
  4. Simmer gently for about 10 minutes, stirring, until the sugar has dissolved and it smells fragrant.
  5. Strain through a muslin lined sieve into a jug to catch the zest.
  6. Funnel into a sterilised bottle, seal and keep in the fridge; use within a couple of weeks.
  7. For a long drink, pour over plenty of ice and top with sparkling water and a lemon slice.
What you'll end up with: About 500ml of fragrant Earl Grey cordial, enough for twenty long, lemony glasses.
