Italian Bergamot Earl Grey Cordial

Method

  1. Steep 4 tea bags in 500ml of just boiled water for 5 minutes, covered.
  2. Lift out the bags, pressing them to get a strong, dark brew.
  3. Tip the brew into a saucepan with the sugar, lemon zest and lemon juice.
  4. Simmer gently for about 10 minutes, stirring, until the sugar has dissolved and it smells fragrant.
  5. Strain through a muslin lined sieve into a jug to catch the zest.
  6. Funnel into a sterilised bottle, seal and keep in the fridge; use within a couple of weeks.
  7. For a long drink, pour over plenty of ice and top with sparkling water and a lemon slice.
