This is a properly refreshing cordial, the sort of thing you want long and cold on a hot day. Brewing the lemongrass tea with a couple of bruised fresh stalks doubles down on that clean, citrussy note, and a good hit of lime juice keeps it sharp rather than sweet.

Topped with sparkling water and a sprig of mint it drinks like a Thai style cooler, and being caffeine free it is one the whole table can have. Makes about 500ml of cordial, which goes a long way.

You'll need

  • 4 pyramid tea bags of Teapigs Pure Lemongrass
  • 500ml freshly drawn water at 100C, just off the boil
  • 250g caster sugar
  • 50ml fresh lime juice
  • 2 fresh lemongrass stalks, lightly crushed
  • 1 medium saucepan
  • 1 fine sieve for straining
  • 1 sterilised 500ml glass bottle with cap
  • 1 saucer for covering the steep

Method

  1. Steep the four pyramid bags and two bruised lemongrass stalks in 500ml of just boiled water for seven minutes, covered.
  2. Lift out the bags, leaving the stalks in, and press gently.
  3. Tip the brew and stalks into a pan with the sugar and lime juice.
  4. Simmer gently for ten minutes, stirring until the sugar has dissolved.
  5. Strain through a fine sieve into a jug, pressing the stalks to get everything out.
  6. Pour into a sterilised bottle while still warm, seal and chill.
  7. To serve, mix one part cordial with four parts sparkling water over ice, with a sprig of mint.
  8. Tip: keep refrigerated and use within two weeks; a slice of cucumber in the glass makes it even more cooling.
What you'll end up with: About 500ml of lemongrass and lime cordial, enough for twenty sparkling, minty coolers.
