Lemongrass and Lime Cordial

Method

  1. Steep the four pyramid bags and two bruised lemongrass stalks in 500ml of just boiled water for seven minutes, covered.
  2. Lift out the bags, leaving the stalks in, and press gently.
  3. Tip the brew and stalks into a pan with the sugar and lime juice.
  4. Simmer gently for ten minutes, stirring until the sugar has dissolved.
  5. Strain through a fine sieve into a jug, pressing the stalks to get everything out.
  6. Pour into a sterilised bottle while still warm, seal and chill.
  7. To serve, mix one part cordial with four parts sparkling water over ice, with a sprig of mint.
  8. Tip: keep refrigerated and use within two weeks; a slice of cucumber in the glass makes it even more cooling.
