Rosehip And Raspberry Hot Toddy

A proper fruit hot toddy for a cold night: a sweet rosehip and raspberry tea brewed strong, sharpened with lemon, sweetened with honey and laced with a measure of spiced dark rum. The fruit tea gives it a deep berry colour and a built-in fruitiness that plays beautifully with the warm spice of the rum. There is an easy alcohol-free version too.

You'll need

  • 1 tea bag of Dragonfly Organic Sweet Rosehip and Raspberry
  • 180ml freshly drawn water at 100C, just off the boil
  • 15ml fresh lemon juice
  • 1 teaspoon of clear honey
  • 30ml warm spiced dark rum (or 30ml apple juice for alcohol-free)
  • 1 fresh lemon wheel
  • 3 fresh raspberries
  • 1 tall 250ml glass mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm a glass mug, then steep the tea bag in 180ml just-boiled water for six minutes under a saucer.
  2. Lift the bag out, then stir in the honey and lemon juice while the brew is warm.
  3. Stir in the spiced dark rum, or apple juice for an alcohol-free version.
  4. Float a lemon wheel and a few raspberries on top.
  5. Serve warm.
  6. Tip: warm the rum slightly before stirring it in, so it does not cool the drink down.
What you'll end up with: A warm, berry-red fruit toddy, fruity and sharp with lemon, honey and a measure of spiced rum.
