Exact quantities, then the method.

For an Earl Grey gin and tonic you steep the gin with Earl Grey for a couple of hours first, letting the bergamot and a little tea tannin settle into the spirit. You end up with a G and T that's fuller and gently perfumed, and it takes barely two minutes to put together once the gin is ready.

You'll need

  • For the Earl Grey gin: 200ml gin and 2 Tetley Earl Grey tea bags
  • 50ml Earl Grey infused gin, per serve
  • 150ml chilled tonic water
  • Plenty of ice
  • A strip of orange or lemon peel, to garnish
  • Zero alcohol version: 50ml strong cold Earl Grey plus a 0% gin alternative

Method

  1. Infuse the gin: drop 2 Earl Grey bags into 200ml gin and leave 2 to 3 hours at room temperature, no longer or it turns tannic and dry. Squeeze gently and remove the bags. This makes enough for four drinks and keeps for weeks.
  2. Fill a large glass to the top with ice; this chills the glass and slows dilution.
  3. Pour over 50ml of the Earl Grey infused gin.
  4. Add 150ml chilled tonic, pouring down a bar spoon or the side of the glass to keep the bubbles.
  5. Express an orange or lemon peel over the top and drop it in. Stir once, gently.
  6. Zero alcohol version: use 50ml strong cold Earl Grey and a 0% gin alternative, built the same way over ice with tonic.
What you'll end up with: A deeper, more fragrant G and T carrying bergamot and a soft amber colour from the tea. Crisp and dry, with an alcohol-free version that keeps the Earl Grey character.
