An elderflower pear spritz is what to pour at a summer party when champagne feels too heavy: chilled elderflower and pear White Tea, dry vermouth or gin, prosecco and lemon, light enough to drink before lunch. The tea base stands in for the sugary elderflower cordial most bartenders reach for, so it drinks dry rather than syrupy.

It uses Good Earth Elderflower and Pear White Tea, a delicate white tea blend. Five minutes plus chilling.

You'll need

  • 2 Good Earth Elderflower and Pear White Tea bags
  • 200ml water cooled to 80C
  • 50ml dry vermouth or gin (25ml per glass)
  • 200ml chilled prosecco
  • 1 lemon, sliced and squeezed
  • Ice and a sprig of mint, to serve

Method

  1. Steep the 2 bags in 200ml water cooled to 80C for 4 minutes for a pale, fragrant white tea base; over hot or over long would ruin the spritz.
  2. Lift the bags out and chill the brew fully.
  3. Fill two large wine glasses with ice. Add 25ml of vermouth or gin to each.
  4. Pour 75ml of the chilled white tea base over the ice, followed by a squeeze of lemon juice.
  5. Top each glass with 100ml chilled prosecco, slowly so it does not foam over.
  6. Stir once gently, garnish with a lemon slice and a sprig of mint.
What you'll end up with: A pale, fragrant spritz that drinks light and dry: white tea in place of the sugary cordial most spritzes lean on, with prosecco lift and a clean lemon edge.
