Elderflower Pear Spritz (Adult)

You'll need
- 2 Good Earth Elderflower and Pear White Tea bags
- 200ml water cooled to 80C
- 50ml dry vermouth or gin (25ml per glass)
- 200ml chilled prosecco
- 1 lemon, sliced and squeezed
- Ice and a sprig of mint, to serve
Method
- Steep the 2 bags in 200ml water cooled to 80C for 4 minutes for a pale, fragrant white tea base; over hot or over long would ruin the spritz.
- Lift the bags out and chill the brew fully.
- Fill two large wine glasses with ice. Add 25ml of vermouth or gin to each.
- Pour 75ml of the chilled white tea base over the ice, followed by a squeeze of lemon juice.
- Top each glass with 100ml chilled prosecco, slowly so it does not foam over.
- Stir once gently, garnish with a lemon slice and a sprig of mint.
