Brewing the perfect cup

Water temperature75 to 80°C; white tea is even more heat sensitive than green and boiling water will scorch the delicate buds.
MeasureOne bag (or one heaped teaspoon of loose leaf) per 200ml of water.
Steep3 to 5 minutes. White tea has very low tannins so it cannot really be over brewed, a longer steep simply gives more body without bitterness.
ServiceNo milk and no sugar; the cup is naturally sweet with notes of fresh hay and stone fruit.
Cold brewDrop one bag into 250ml of cold water and refrigerate for 6 to 8 hours; the result is silky and almost honeyed.
