Earl Grey Gin and Tonic

You'll need
- For the Earl Grey gin: 200ml gin and 2 Tetley Earl Grey tea bags
- 50ml Earl Grey infused gin, per serve
- 150ml chilled tonic water
- Plenty of ice
- A strip of orange or lemon peel, to garnish
- Zero alcohol version: 50ml strong cold Earl Grey plus a 0% gin alternative
Method
- Infuse the gin: drop 2 Earl Grey bags into 200ml gin and leave 2 to 3 hours at room temperature, no longer or it turns tannic and dry. Squeeze gently and remove the bags. This makes enough for four drinks and keeps for weeks.
- Fill a large glass to the top with ice; this chills the glass and slows dilution.
- Pour over 50ml of the Earl Grey infused gin.
- Add 150ml chilled tonic, pouring down a bar spoon or the side of the glass to keep the bubbles.
- Express an orange or lemon peel over the top and drop it in. Stir once, gently.
- Zero alcohol version: use 50ml strong cold Earl Grey and a 0% gin alternative, built the same way over ice with tonic.
