Earl Grey Gin and Tonic

Method

  1. Infuse the gin: drop 2 Earl Grey bags into 200ml gin and leave 2 to 3 hours at room temperature, no longer or it turns tannic and dry. Squeeze gently and remove the bags. This makes enough for four drinks and keeps for weeks.
  2. Fill a large glass to the top with ice; this chills the glass and slows dilution.
  3. Pour over 50ml of the Earl Grey infused gin.
  4. Add 150ml chilled tonic, pouring down a bar spoon or the side of the glass to keep the bubbles.
  5. Express an orange or lemon peel over the top and drop it in. Stir once, gently.
  6. Zero alcohol version: use 50ml strong cold Earl Grey and a 0% gin alternative, built the same way over ice with tonic.
