This uses a Chunmee base instead, naturally sweeter and nuttier, so the peppermint sits on something smooth rather than fighting it. Water temperature80°C (use a thermometer or a temperature-controlled kettle; how fast boiled water cools depends on the amount of water and the kettle). Boiling water at 100°C destroys the delicate amino acids that give green tea its smooth, sweet character.
