The Story Behind Pukka
Pukka is a Bristol herbal tea house and one of the few brands in the category that built its reputation on certification rather than on packaging. Organic is in the name of this product, so that much the brand states on the front of the box, and the Pukka lines already on our shelves are consistent about carrying their credentials publicly rather than quietly.

What You Are Actually Buying
- Forty bags, sixty-eight grams: one and seven tenths of a gram a bag, which is a generous dose for a herbal infusion and more than most twenty-bag boxes give you.
- Certified organic: the brand states it in the product name. The certifying body and any further marks are printed on the box.
- No caffeine at all: there is no tea leaf in the blend, so there was none to remove and nothing has been decaffeinated. It can be drunk at any hour.
Getting It Right in the Cup
- Water temperature: 100°C, straight off the boil.
- Measure: one bag per 200 to 250ml.
- Steep: five minutes covered, and longer does no harm here. Under-steeping is the only real mistake.
- Cover it: a saucer over the mug keeps the lemon oils in the liquid instead of losing them to the steam.
- Milk: no. Acid and milk do not get on, and the lemon will curdle it.
- Iced: three bags in 400ml for eight minutes, cooled, poured over ice with fresh lemon. It makes a genuinely good ginger cooler.
- Storage: sealed, cool and dark. Ginger keeps its heat well beyond a year; the lemon top note fades first.
- Best with: after a heavy meal, a cold morning, or the cup you reach for when you feel rough.

- 1 bag Pukka Organic Lemon, Ginger & Manuka Honey
- 250ml water straight off the boil
- A slice of fresh lemon, optional
- Pour 250ml of water straight off the boil over one bag.
- Cover the mug with a saucer and leave it five minutes, which keeps the lemon oils in the liquid.
- Lift the bag out and add a slice of fresh lemon if you want the top note sharper.
- Drink it clear, with no milk.
What you'll end up with: A properly warming ginger cup rather than the thin lemon drink most people get from this blend. The saucer and the five minutes are the whole difference.
The Cold Buster Pot
How to make The Cold Buster Pot with Pukka Organic Lemon, Ginger and Manuka Honey.
- 3 bags Pukka Organic Lemon, Ginger & Manuka Honey
- 500ml water straight off the boil
- 1 tablespoon honey
- Juice of half a lemon
- Steep three bags in 500ml for eight minutes with the lid on.
- Lift all three bags out before the first pour.
- Stir in the honey and the lemon juice while the pot is still hot.
- Leave the pot on the side; with no tannin in it, it will not turn bitter for an hour.
What you'll end up with: A pot that suits a day on the sofa. Stronger than the mug ratio on purpose, and it holds its character long after a black tea would have gone stewed.
Iced Ginger Lemon Cooler
How to make Iced Ginger Lemon Cooler with Pukka Organic Lemon, Ginger and Manuka Honey.
- 3 bags Pukka Organic Lemon, Ginger & Manuka Honey
- 400ml just boiled water
- A glass filled with ice
- Fresh lemon, sliced
- Steep three bags in 400ml for eight minutes, then cool completely.
- Fill a tall glass with ice and add the lemon slices.
- Pour the cold infusion over and stir.
What you'll end up with: Warming ginger against cold liquid is a far better combination than it sounds, and this is one of the few herbals that improves over ice rather than thinning out.
Hot Toddy (Adult)
How to make Hot Toddy (Adult) with Pukka Organic Lemon, Ginger and Manuka Honey.
- 1 bag Pukka Organic Lemon, Ginger & Manuka Honey
- 200ml just boiled water
- 25ml whisky or dark rum
- 1 tablespoon honey
- A lemon slice studded with a clove
- Steep one bag in 200ml for six minutes in a heatproof glass.
- Stir in the honey while it is hot, then the spirit.
- Garnish with the clove-studded lemon slice.
What you'll end up with: The classic build for the first evening of a cold. The infusion is doing the work here; the spirit is along for the ride.

How to make Ginger Syrup For The Fridge with Pukka Organic Lemon, Ginger and Manuka Honey.
- 6 bags Pukka Organic Lemon, Ginger & Manuka Honey
- 200ml just boiled water
- 150g caster sugar
- Peel of 1 lemon
- Steep six bags in 200ml for fifteen minutes to make a very strong concentrate.
- Squeeze the bags out, then warm the liquid with the sugar and the lemon peel until the sugar dissolves.
- Bottle it, keep it in the fridge and use it within two weeks.
What you'll end up with: A ginger cordial for sparkling water, cocktails or drizzling over fruit. Six bags from a forty-bag box is the kind of thing a large format makes reasonable.
Poached Pears In Ginger
How to make Poached Pears In Ginger with Pukka Organic Lemon, Ginger and Manuka Honey.
- 4 bags Pukka Organic Lemon, Ginger & Manuka Honey
- 600ml just boiled water
- 4 firm pears, peeled
- 3 tablespoons honey
- Steep four bags in 600ml for ten minutes to make a strong poaching liquor, then remove them.
- Add the honey and the peeled pears and simmer gently for twenty minutes until a knife goes through easily.
- Reduce the liquor by half after lifting the pears out, and pour it over them to serve.
What you'll end up with: Pears that taste of ginger all the way through rather than just on the outside. The reduced liquor sets to a light syrup as it cools.
