A plain Green Tea is the one to master, because once you can brew this well, every flavoured green follows. The rules are simple: water off the boil at around 80C, not scalding, and a short three minutes so it stays sweet and grassy rather than bitter. The bonus with a good green tea is that the leaves are not spent after one go. Brew it a touch stronger and you can often coax a gentle second cup from the same bag.

You'll need

  • 1 tea bag of Lipton Organic Green Tea
  • 250ml freshly drawn water cooled to 80C
  • 1 250ml mug, warmed
  • 1 saucer for covering during steep

Method

  1. Warm your mug with a little hot water and pour it away.
  2. Boil the kettle and let it stand a minute or two to drop to around 80C.
  3. Drop in the tea bag and pour the cooled water over.
  4. Cover with a saucer and steep for three minutes, no longer.
  5. Lift the bag out and drink it as it is; plain green needs nothing added.
  6. Tip: keep the bag and re steep it within the hour for a lighter, softer second cup.
What you'll end up with: A clean, grassy cup of green tea, and usually a gentle second one from the same bag.
