Brewing the perfect cup

Water temperature80°C. Use a kettle with temperature control or a thermometer, because there is no fixed waiting time: a full kettle and a nearly empty one cool at different speeds. Plain green leaf has nowhere to hide: 100°C water ruins the delicate amino acids that give it a smooth, sweet taste.
MeasureOne bag will do a standard 200ml mug. For loose leaf, use one heaped teaspoon.
SteepBetween 2 and 3 minutes, as anything longer brings out bitterness. Remove the bag promptly; do not squeeze.
ServiceDrink it straight, with neither milk nor sugar, so the leaf's natural sweet grassy notes come through. Lemon is not essential, but a slice gives the plain leaf a brighter edge.
