Iced Green Tea with Cucumber and Lemon
A clean, unsweetened iced green tea with cucumber and lemon, gently brewed and endlessly refreshing.

Iced Green Tea does not get cleaner than this: no sugar, no fruit syrup, just cool tea sharpened with lemon and freshened with a wheel of cucumber. Cucumber and green tea have a quiet affinity, both cool and faintly grassy, and together they make a glass about as restorative as a soft drink gets. Brew the tea gently at around 80C so it stays smooth once it is iced.

You'll need
- 2 tea bags of Lipton Organic Green Tea
- 200ml freshly drawn water cooled to 80C
- 200ml cold still water
- 1 fresh cucumber wheel (about 5mm thick)
- 1 fresh lemon wheel
- 1 tall 450ml glass, chilled in the freezer for ten minutes
- Enough cubed ice (about 250g)
- 1 small jug for steeping, 1 saucer for covering
Method
- Boil the kettle, then let it cool for a minute or two to about 80C, so the green tea does not scorch.
- Steep the 2 bags in 200ml of that cooled water for four minutes, covered, then take them out.
- Chill the brew right down, in the fridge or a bowl of cold water.
- Pack a tall glass with ice and pour the cold tea over it.
- Top up with the cold water to lengthen.
- Slip in the cucumber and lemon wheels, giving the lemon a gentle squeeze.
- Tip: make a jugful and leave the cucumber and lemon in, for a clean, refreshing drink all day.
