Cleanse is a green tea led blend with nettle and fennel, and it really does live or die on the brew. The green base wants cooler water to stay smooth, while the fennel and herbal side wants a slightly longer steep to come through, so brew it around 80C for a touch longer than plain green and you get a clean, savoury sweet cup rather than a bitter, weedy one.

It uses Teapigs Cleanse, a whole leaf green and herbal blend. One mug, a few minutes.

You'll need

  • 1 Teapigs Cleanse tea temple
  • 250ml water, boiled then cooled to about 80C
  • A thin slice of lemon, optional
  • A little honey, optional

Method

  1. Boil fresh water and let it cool 2 to 3 minutes to about 80C; the green base in this blend turns bitter if hit with boiling water.
  2. Put the temple in the mug and pour the cooled water over it.
  3. Cover and steep 4 minutes, a little longer than plain green tea, so the fennel and nettle side has time to come through behind the green.
  4. Lift the bag out without squeezing.
  5. Taste; a slice of lemon brightens the herbal notes and a little honey rounds the savoury edge if you prefer it softer.
What you'll end up with: A pale, savoury sweet cup where the smooth green tea and the gentle fennel and nettle sit in balance, never bitter or weedy.
